Never leave home without my blessed salt, kosher salt of course! Or should I say of "coarse"? Cream cheese frosting is tricky. At SPoT we would whip the butter forever, then drop hunks of cream cheese in one at time, making sure it was incorporated thoroughly before adding more. Powdered sugar didn't go in until it was already positively perfect. It is one of those simple recipes that is not easy.
